Prepare the Panna Cotta

In a small bowl, sprinkle 2 teaspoons of gelatin over 2 tablespoons of cold water and let stand until softened, about ⏱️ 2 minutes.

In a large saucepan, combine cream, half and half, ⅓ cup sugar, and vanilla extract. Bring the mixture just to a simmer over medium-high heat, then let it simmer for about ⏱️ 15 minutes, stirring regularly.

Remove the saucepan from the heat and strain it into a bowl. Stir in the softened gelatin mixture until it has completely melted and is fully incorporated.

Prepare the Raspberry Gelee

Place ¼ cup of cold water in a medium saucepan and sprinkle the remaining 1½ teaspoons of powdered gelatin over it. Let it sit for a couple of minutes to soften.

Add the raspberries, ¼ cup sugar, and lemon juice to the saucepan. Bring the mixture to a simmer over medium heat, stirring occasionally to help break down the berries.

Once the berries have softened, remove the pan from the heat and press the mixture through a sieve into a clean measuring cup. Let it cool for about ⏱️ 10 minutes.

Carefully pour a layer of the cooled raspberry gelee over the tops of the set panna cotta.
