Ranch Zucchini Boats
Ranch Zucchini Boats are stuffed with chopped fresh zucchini, garlic, Ranch seasoning, EVOO and shredded Mozzarella cheese.

Preheat oven to 350 degrees F.

Wash the outer skin of the zucchini by gently scrubbing with a vegetable brush to remove any excess dirt.

Trim the ends off of the zucchini; then cut each one in half vertically forming four boats. Scrape out the inside flesh using a small knife or a kitchen teaspoon; leaving 1/4-inch zucchini shell.

Chop the inside zucchini flesh into small pieces and add to a bowl along with the Ranch package, garlic, EVOO and half of the cheese. Mix well; then add the mixture back into the zucchini shells and top with remaining cheese.

Place them into an oven safe baking dish and bake for β±οΈ 25-30 minutes until the cheese has melted and the zucchini is soft and cooked through.
