Make the rainbow peanut butter cups:

Melt candy according to package directions. You need about 1/2 cup of melts per 6 peanut butter cups.

Dip peanut butter cups into melted colored candy and tap off excess. Place on a wax paper lined cookie sheet and chill until hardened. This can be done a day ahead of time.

Make the cookies:

Preheat oven to 350 degrees. Spray mini muffin pans (36 cavities) with cooking spray.

Cream butter and peanut butter until mixed. Add sugars and cream until fluffy. Beat in egg, vanilla, milk and baking soda. Slowly mix in flour until dough comes together.

Scoop 1 tablespoon of dough into each mini muffin cup. (Optionally, you could roll each cookie into a ball and drop it into the muffin pans. This will make them “prettier”.)

Bake for ⏱️ 8-9 minutes, until they just start to turn golden brown. While they are hot, place a peanut butter cup in the center of each. Cool completely (let the candy harden) before removing from pan. To remove, us a butter knife to carefully loosen the cookie from the pan. It should pop right out!
