Preheat oven to 425°F. Line a large rimmed sheet pan with parchment paper. In a large bowl, toss the zucchini, bell peppers, and red onion with 2 tablespoons of olive oil, cumin, smoked paprika, oregano, red pepper flakes, salt, and pepper. Spread in a single layer on the pan.

Roast for ⏱️ 12 minutes. Remove the pan, flip the vegetables, and add the drained and dried chickpeas. Drizzle with a little more oil and a pinch of salt. Return to the oven and roast for another ⏱️ 8-12 minutes, until vegetables are tender and chickpeas are golden.

While the vegetables roast, bring the vegetable broth to a boil in a medium pot with 1 tablespoon of olive oil and a pinch of salt. Stir in the dry couscous, immediately remove from heat, and cover with a tight-fitting lid. Let it sit undisturbed for ⏱️ 5 minutes to steam.

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon zest, 2 tablespoons of lemon juice, minced garlic, Dijon mustard, and honey or maple syrup to create the dressing.
