Cook the noodles according to packet instructions. Drain and run under cold water to halt the cooking process.

Whisk the maple syrup, miso, tamari and 2 tablespoons water in a small bowl. Set aside.

Heat the oil in a frying pan over high heat. Add the tofu and cook for 5–⏱️ 6 minutes, stirring occasionally, until golden brown. Add the broccoli, spinach and the sauce; cook for about ⏱️ 2 minutes, stirring often, until broccoli is vibrant green.
