Pack sliced radishes, allspice, and peppercorns into a 16-ounce wide-mouthed canning jar until full. Whisk together water, sugar, salt, and vinegar in a bowl until sugar is dissolved. Pour over radishes. Let stand ⏱️ 1 hour. Cover and refrigerate ⏱️ 8 hours or up to 3 weeks.
