Quick Gochujang Noodles With Mushrooms & Spinach
These noodles are minimum effort, maximum flavour. Gochujang is a Korean fermented chili paste that brings deep, rich, spicy flavour to any dish you add it to. Gochujang can be found in Asian markets or online, and it is becoming increasingly widely available in mainstream supermarkets.

📝 Preparation Steps

Cook the noodles according to packet instructions. Drain and run under cold water to halt the cooking process. Set aside while you make the sauce and cook the vegetables.

Place a frying pan over high heat and add a drizzle of olive oil. Add the mushrooms and cook until golden, caramelised and reduced. This usually takes about ⏱️ 10 - 15 minutes.

While the mushrooms are cooking make the sauce by whisking together the Gochujang, toasted sesame oil, maple syrup and rice vinegar until no lumps remain.

When the mushrooms are done to your liking add the spinach to the pan and cook until it has wilted, this usually only takes a minute or two. Then add the noodles and sauce, and toss until everything is coated and glossy.

Serve immediately, garnishing with spring onions and sesame seeds if desired.
