Quick Butter Bean & Carrot Salad
This butter bean salad is so simple and quick to make. The red onion and butter beans taste delicious with the crunchy walnuts and the freshness from the rocket and carrots. We love to serve this topped with a big drizzle of creamy tahini.

Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the sliced onion, garlic, carrots, sun-dried tomatoes, walnuts and a pinch of salt. Mix well and cook for 5–⏱️ 10 minutes until everything becomes soft.

Mix through the drained butter beans and cook for ⏱️ 5 minutes until the beans are slightly crispy. At this point, stir through the lemon juice, rocket and a pinch more salt (if needed) and serve.
