📝 Preparation Steps
1
Heat oven to 350°F. Lightly butter and flour 3 round cake pans: 6, 8, and 10 inches. Beat butter, cake mix, eggs, pecans, pumpkin purée, pumpkin spice, and 1 1/2 cups water on medium-high speed with an electric mixer until smooth. Divide between prepared pans. Bake until a skewer inserted into the center comes out clean, ⏱️ 25 minutes for the 6-inch pan, ⏱️ 30 minutes for the 8-inch pan, and ⏱️ 35 minutes for the 10-inch pan. Cool completely on a wire rack.
2
Make Buttercream: Combine the gelatin and 2 tablespoons water and let sit for ⏱️ 10 minutes. Bring the honey, sugar, and 2 tablespoons water to a boil in a small saucepan, reduce heat to low, and simmer for ⏱️ 5 minutes. Remove from heat and let cool for ⏱️ 3 minutes.
3
Stir 2 tablespoons of the honey mixture into the gelatin until dissolved. Whisk into the remaining honey syrup along with the salt and cinnamon. Strain into a medium-size bowl and beat, using a mixer set on high speed, until doubled in volume and completely cool, about ⏱️ 10 minutes. Add the butter, 2 tablespoons at a time, while continuously beating. Stir in the vanilla and use immediately or keep chilled.
4
Stack tiers, spreading Honey and Spice Buttercream between layers. Decorate with marzipan pumpkins, if desired.
