To Make Brioche:

Place yeast in bowl. Lightly grease a separate bowl. Melt butter in a small saucepan over low heat. Add oil, milk, and egg. Cook, stirring frequently, until an instant read thermometer reads 110°F. Pour over yeast and let sit until yeast is bubbling, 8 to ⏱️ 10 minutes.

Whisk together flour, sugar, salt, and malted milk powder in a bowl. Add dry ingredients to butter mixture. Beat with an electric mixer fit with a dough hook on low until ingredients come together. Increase speed to high and beat until the dough is glossy and elastic and pulls away from the sides of the bowl, 9 to ⏱️ 11 minutes. Transfer to prepared bowl and cover with plastic wrap. Refrigerate, ⏱️ 1 hour. While dough is resting, make the Coffee Butter, Spiced Sugar, and Pumpkin Spice Glaze if not already made.

Invert dough onto a floured work surface. Roll to a 1/2-inch-thick, 8- by 16-inch rectangle. (The shape does not have to be perfect.) Spread 1/2 cup of the Coffee Butter on the dough all the way to the edges. Sprinkle 1 cup of the Spiced Sugar evenly across the dough. Roll dough into a log, starting at one short end.

Use a knife to cut the log into 1/2-inch-thick slices; cut slices into 1/2-inch pieces. Divide 1/2 of the dough between 2 8-inch cast-iron skillets. Top with remaining Coffee Butter and Spiced Sugar, dividing evenly. Top with remaining dough pieces, dividing evenly. Cover with plastic wrap and let rest, at room temperature, until dough rises slightly, about ⏱️ 45 minutes.

Preheat oven to 350°F. Place skillets on a rimmed baking sheet and bake until golden brown, 25 to ⏱️ 30 minutes. Drizzle with Pumpkin Spice Glaze. Serve warm.

To Make Coffee Butter:

Beat butter, coffee, and salt with an electric mixer on medium speed until combined and smooth, 1 to ⏱️ 2 minutes.

To Make Spice Sugar:

Combine granulated sugar, brown sugar, coffee, and pumpkin spice in a bowl.

To Make Pumpkin Spice Glaze:

Beat cream, pumpkin, brewed coffee, ground coffee, pumpkin spice, and salt with an electric mixer on medium speed until smooth, 3 to ⏱️ 5 minutes. Reduce mixer speed to low and slowly beat in sugar until smooth.
