Pumpkin Pie
We make this recipe for Thanksgiving every year and it's always a great success. The dates give the filling a really smooth, gooey texture, while the cinnamon brings plenty of autumnal spice.

Preheat the oven to 180°C fan / 350°F.

Make the crust by placing the oats into a food processor and pulse until broken down. Then add the almond flour and maple syrup and pulse until a dough forms. If you squeeze some together in your hands it should stay compressed.

Grease the bottom of a pie dish with coconut oil before using a spatula to cover with the crust mixture.

Bake for about ⏱️ 10 minutes until golden.

Make the filling by placing all of the ingredients into a food processor and pulsing until smooth.

Once smooth, keep this mixture in the fridge until ready to spread over the base.

Once the base has cooked, spread the filling across and bake again for ⏱️ 15 minutes before serving.
