Pumpkin Bread
This pumpkin bread is the perfect sweet Autumnal treat to bake at home and fill the house with delicious smells of sweet pumpkin and spices. We love to enjoy this for a mid-morning snack but it's also delicious served for dessert with a dollop of coconut yoghurt.

π Preparation Steps

Preheat the oven to 180C (355F), fan setting. Line a 900g/30oz loaf tin with baking parchment.

In a large bowl, mix together the plain flour, coconut sugar, bicarb, baking powder and spices until there are no lumps.

Add the pumpkin puree, almond milk and melted coconut oil and mix really well until a smooth batter forms.

Once the mixture is smooth, mix through the raisins and spoon everything into the lined loaf tin.

Cook for β±οΈ 45-50 minutes until golden and a knife inserted in the centre comes out clean β if it doesnβt, place back in the oven for 5-10 more minutes.

Once cooked, remove from the oven and leave to cool a little before enjoying.
