Pulled Jackfruit With Chickpeas & Peanuts
This hearty stew makes a great base for a number of dishes throughout the week. The pulled jackfruit adds a satisfying meaty texture to the chickpeas, which are cooked in a rich peanut sauce. Tinned jackfruit has become increasingly widely available in supermarkets in recent years. If you can’t find it or want to replace it with something else we recommend firm tofu. Simply grate a block on a box grater and cook over medium-high heat in olive oil until golden brown before adding the chickpeas and peanut sauce. This recipe makes enough for three portions. It freezes and defrosts very well so you can use two in our February meal plan and freeze one for future use.

Whisk together the peanut butter, vinegar, maple syrup, tamari, sriracha, sesame oil, and oat or almond milk in a medium bowl until well combined and no clumps of peanut butter remain. Set aside.

Place a heavy bottomed pan over medium heat and add a generous drizzle of olive oil. Add the onion, garlic, and ginger and cook, stirring frequently, until softened, about ⏱️ 5 minutes.

Meanwhile, shred the jackfruit using your hands until no large chunks remain. Add the shredded jackfruit and chickpeas to the pan and cook, stirring often, until warmed through, ⏱️ 2-3 minutes.

Add reserved peanut butter mixture to the pan and stir into the jackfruit-chickpea mixture until well combined. Cook, until coated and the sauce thickens slightly, ⏱️ 2-3 minutes. Stir in the coriander and season with salt to taste.

Cool completely before placing in airtight containers. Store in the refrigerator for up to five days.
