Pulled Jackfruit Pancakes With Hoisin Sauce

Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the chopped onion, garlic and a pinch of salt; mix well and cook for 5–⏱️ 10 minutes until soft.

Once the onion feels soft, add the spices. Mix well and cook for another minute before adding the drained jackfruit, harissa paste and tomato purée.

Leave to cook for 15–⏱️ 20 minutes, stirring occasionally, until the jackfruit feels really soft and breaks down. You may want to add a dash of water every so often to make sure that the jackfruit doesn’t stick to the bottom of the pan. Once it feels soft, pull it apart using a fork or the back of a wooden spoon to create a stringy, pulled texture.

Add the lime juice, date syrup and a splash of water; cook for another few minutes, while you prepare the sauce.

Make the sauce by mixing together all of the ingredients to form a thick, smooth sauce.

Warm the pancakes before serving everything in bowls. To enjoy, spoon some sauce onto a pancake and pile high with pulled jackfruit, crunchy cucumber and spring onions.
