Thaw the puff pastry according to package directions. Preheat your oven to 400°F (200°C) and lightly grease four 4-inch ramekins.

Unroll the pastry on a floured surface and roll slightly thinner (1/8 inch). Cut four circles (4.5 to 5 inches) and press them into the ramekins, leaving a slight overhang.

Line shells with parchment and weights (or beans). Blind bake for ⏱️ 12-15 minutes. Remove weights and bake for another ⏱️ 3-5 minutes.

In a skillet, heat olive oil over medium heat. Sauté shallot and garlic for ⏱️ 2-3 minutes. Add spinach and cook until wilted (⏱️ 3-5 minutes). Remove from heat.
