Protein-Packed Spelt Pancakes
These protein-packed pancakes are made with a blend of gram flour, spelt flour and mixed seeds, providing a boost of protein to start the day. They’re a great example of an easy lift to increase your intake of protein and fibre. We love them with creamy coconut yoghurt, berry compote and a drizzle of nut-butter.

To make the batter, sift both flours, baking powder, seeds and a generous pinch of salt into a large bowl; stir together.

Gradually whisk in the milk, vanilla extract (if using) and maple syrup until you have a smooth batter.

Warm a scant drizzle of oil in a large frying pan set over medium–high heat. Once hot, add a ladleful of batter, about three-quarters full, and quickly swirl the mixture around the pan to create a large, thin crêpe. Cook for 1 ½–⏱️ 3 minutes on each side until golden.

Repeat with the remaining batter, adding more oil to the pan as needed. To keep the pancakes soft and warm, wrap them in a clean tea towel.

Serve immediately with your favourite toppings. We love them with lemon and coconut sugar, or with a berry compote, coconut yoghurt and a drizzle of nut-butter.
