Cut each pear into 12 slices, removing the core. Drizzle with lemon juice and season with salt and pepper.

Combine the fig preserves and mustard in a small bowl. Dollop about ¼ teaspoon of the fig mixture on one cut side of each slice of pear. Press 2 or 3 arugula leaves into the fig mixture, then wrap with a piece of prosciutto. Serve immediately.
