This protein granola is the perfect prep-ahead breakfast to get your day off to a good start. It’s filled with golden toasted nuts, seeds, buckwheat and crunchy cacao nibs. We love it served with creamy coconut yoghurt and a fruit compote.

Preheat the oven to 160°C fan / 350°F. Line a large baking tray with baking parchment.

Pour the buckwheat, seeds, nuts, coconut flakes, cacao nibs and cinnamon into a large bowl.

Gently melt the coconut oil and maple syrup in a small saucepan set over low heat. Pour into the dry mixture and stir to combine. Transfer to the baking tray and spread out into a single layer.

Bake for 25–⏱️ 35 minutes, stirring once or twice, until deeply golden. Remove from the oven and set aside to cool. Store in a sealed container or Kilner jar for up to 4 weeks.
