In a shallow dish, combine the garlic powder, paprika, salt, mustard powder, black pepper, and cayenne. Pat the chicken dry, season both sides with 1 tablespoon of the spice mixture, and transfer to a platter or cutting board. Whisk the flour into the remaining spice mixture.

In another shallow dish, beat the eggs. Place the crushed potato chips in a third shallow dish.

Working with 2 to 3 tenders at a time, dredge the seasoned chicken in the flour mixture, dip in the beaten egg to coat completely (letting the excess drip off), then dredge in the potato chips to coat completely. Place the breaded tenders on the prepared baking sheet. Repeat until all the tenders are breaded.

Bake, flipping halfway through, until the chicken is golden brown and an instant-read thermometer registers 165°F, about ⏱️ 20 minutes.
