Cook the potatoes in salted boiling water for ⏱️ 10 minutes, until tender (a knife should slide in easily). Once cooked, drain well and carefully return to the pan to steam dry for a few minutes.

While the potatoes are cooking, warm 1 tablespoon of olive oil in a large frying pan, set over medium–high heat. Add the mushrooms, season and fry for ⏱️ 10 minutes, stirring often, until golden. Remove from the pan and set aside.

Drizzle the remaining oil in the pan and add the potatoes, arranging them in a single layer. Cook for ⏱️ 15 minutes, turning once, until golden on both sides.

Stir through the garlic and rosemary and cook for a couple of minutes, until fragrant; then add the cavolo nero and mushrooms. Cook for ⏱️ 5 minutes until wilted.

Remove the pan from the heat, season well with salt and pepper, then stir through the parsley and spring onions. Divide between plates and serve.
