Pork Chops in Balsamic Fig Sauce
With fig season quickly coming to an end I picked up a bunch of them on the weekend. I made some fig jam and I wanted to try using it in a savoury dish. Pork

Heat the oil in a pan.

Add the pork chops and sear both sides until golden brown and set aside.

Add the shallots and saute until tender.

Add the garlic and saute until fragrant.

Add the balsamic vinegar and deglaze the pan.

Add the fig jam, thyme, salt and pepper and simmer for a few minutes to reduce to a sauce.
