Combine the onion, panko, milk, Worcestershire sauce, pepper, and 2 teaspoons salt in a large bowl. Let sit until the liquid is fully absorbed, about ⏱️ 5 minutes. Add the pork and gently mix into the panko mixture.

Brush the peaches with the vegetable oil and sprinkle with the remaining 1⁄4 teaspoon salt. Preheat a grill or grill pan to medium high and oil the grates. Grill the peaches cut-side down until marked, 3 to ⏱️ 5 minutes. Flip and continue cooking until tender, 2 to 3 more minutes. Remove to a cutting board and let cool slightly, then slice.
