Preheat the oven to 350˚F. Butter a 9-by-13-inch baking dish.

Whisk together the cream of chicken soup, sour cream, salt, pepper and 1 tablespoon of the poppy seeds in a large bowl. Add the chicken and toss to coat. Transfer to the prepared baking dish and spread in an even layer.

Place the potato chips in a large resealable plastic bag and lightly crush them. Add the melted butter and remaining 1 teaspoon poppy seeds to the bag and shake to coat. Evenly sprinkle the crushed chips over the casserole. Bake until golden brown and bubbly, 35 to ⏱️ 40 minutes. Let sit 10 to ⏱️ 15 minutes before serving.
