Plum Upside-Down Cake

Line a 23cm deep round baking tin with oil and with parchment paper on the base, preheat oven to 180C / 160C fan / gas 4.

Put the flour, sugar, potato starch, baking powder, bicarb, salt and lemon zest into a large bowl. Gradually whisk in the milk, vinegar, oil and vanilla until you have a smooth batter.

Put the aquafaba and cream of tartar into a large bowl and whisk using an electric whisk for ⏱️ 3 mins until foamy, fluffy, and pale. Mix it into your cake batter until there aren’t any streaks, and everything is combined.

Place the plum slices in a single layer (making into a pattern if you like) on the base of the lined tin. Pour over the cake batter and smooth to its level.

Bake for ⏱️ 50 minutes, until a skewer comes out clean. Leave to cool completely in the tin, then tip upside down and remove from the tin.
