We all need a pizza recipe in our repertoire. Our plant-based take uses a luscious cashew cream for a “cheesy” hit. We have provided three options for toppings, but the base, sauce, and cashew cream are neutral enough for you to use with any veggie or topping you like.

Begin by making the dough. Place the flours, salt, yeast and coconut sugar in a large bowl and whisk to combine.

Pour the olive oil and warm water into the middle and whisk with a fork to combine until the water has been incorporated. Transfer dough to a clean work surface and knead gently until a smooth dough forms, about five minutes. Shape into a ball. You can also use a stand mixer fitted with a dough hook if you have one. Simply mix until you have a smooth dough, about ⏱️ 3 minutes.

Give the bowl a quick rinse and dry, place the ball of dough back into the bowl, cover, and set aside until dough has puffed up and nearly doubled in size, ⏱️ 45-50 minutes. When the dough has risen divide it into 3 equal-sized portions.

Make the tomato sauce while the dough is proving. Place a medium heavy-bottomed saucepan over medium-high heat and add a drizzle of olive oil. Add the garlic and chili flakes and allow to sizzle until fragrant, about ⏱️ 1 minute. Add the chopped tomatoes, then rinse the tin with 2 tablespoons of water and add this liquid to the tomatoes. Simmer over medium-low heat, stirring occasionally, until darkened and reduced, ⏱️ 15-20 minutes. Season with salt to taste.

You can also make the cashew cream while the dough is proving. Place the cashews into a medium bowl and pour over freshly boiled water from a kettle, enough to cover the cashews by 2 cm / 1 inch. Set aside to soak for at least five minutes. Drain; discarding the soaking liquid and place into a high-speed blender with the oat milk, garlic, mustard, nutritional yeast, and salt. Blend until smooth and creamy.

To bake the pizza preheat oven to 220°C fan / 240°C.

Lightly oil a 30 x 20cm baking tray. Spread the dough into a rectangle directly on the tray using your fingertips.

Spread with tomato sauce and desired toppings (follow the links in the ingredients section for three of our suggestions) and bake in the preheated oven for ⏱️ 15 minutes, or until the crust is golden brown. Remove with a spatula onto a board and drizzle with cashew cream before slicing.
