Preheat the oven & pan

Preheat the oven to 475°F/246°C. Go ahead and place an empty sheet pan in the oven. The pita crust will go on it and having it hot will make the crust crisp up a bit faster.

Season & sear the chicken

Set a cast iron over medium high heat. Then, season the chicken: set the boneless chicken thigh on a plate and add a sprinkle of salt on both sides to ensure even coverage. Add the mayo and seasonings to the chicken and rub it all over. Add the chicken to the hot pan and let it brown up on each side. Sear it until it reaches 160°F/71°C. Let it rest a few minutes before slicing it up. Gather any remaining components and get ready to assemble.

Assemble & bake the ‘pizza’

Place the pita down and spread the hummus over it evenly. Next, add the cheese and chicken, or whatever cooked toppings you want. Pull the hot sheet pan from the oven and place the pita on top. Slide it into the oven to bake for 5 or so minutes until the cheese is melted. Pull the pizza out and add the lettuce, tomato, and pickled onion or whatever else you like. Get creative and have fun with it! Slice it up & enjoy.
