Piri Piri Traybake
This simple dinner is absolutely packed with flavour. The roasted paprika and garlic potato wedges, corn and red peppers are delicious served with a green salad and a generous drizzling of either chermoula or harissa.

Preheat the oven to 180°C fan. Pat the potatoes dry with kitchen paper and transfer to a large roasting tin. Pour over half of the olive oil and season to taste. Roast for ⏱️ 20 minutes, while you prepare the piri piri sauce.

Blend half the onion with one of the peppers, the garlic, chilli, paprika, oregano leaves, vinegar and remaining olive oil. Season to taste.

Tip the remaining pepper and the corn into a mixing bowl and pour over the piri piri sauce.

After ⏱️ 20 minutes, remove the tray from the oven. Stir the potatoes and add the piri piri coated veg. Roast for 20–⏱️ 25 minutes, until the vegetables are just tender and golden.

Serve with a simple green salad and a drizzle of chermoula, harissa or pesto for extra flavour.
