In a small saucepan, combine 1.5 cups unsweetened cranberry juice and 2 teaspoons of agar agar powder. Whisk well and let sit for ⏱️ 5 minutes to bloom.

Place the saucepan over medium-low heat. Bring the mixture to a gentle simmer, whisking constantly for 1 to ⏱️ 2 minutes until the agar agar is completely dissolved.

Remove from heat. Stir in 2 tablespoons of fresh lemon juice and optional stevia or monk fruit drops to taste.

Carefully pour the hot mixture into silicone molds or a glass container. Pop any surface bubbles with a toothpick for a smooth finish.
