Preheat your oven to 350°F and line a baking sheet with parchment paper.

In the bowl of your stand mixer fitted with the paddle attachment, cream together butter, granulated sugar, and brown sugar on medium speed for ⏱️ 2 minutes.

Add in the egg, crushed pineapple, vanilla, baking soda, and salt. Mix until fully combined.

Turn mixer to low and slowly add in the flour until just incorporated.

Stir in 1 cup of the toasted coconut.

Using a medium (2 tablespoon) cookie scoop, drop dough onto your prepared baking sheet about 2 inches apart.

Sprinkle remaining 1/2 cup toasted coconut on top of the dough mounds.

Bake for 9–⏱️ 10 minutes or until the edges are golden and the tops are just set.

Let cool on the baking sheet for ⏱️ 5 minutes, then transfer to a wire rack to cool completely.
