Combine all the ingredients in a large bowl by either using a stand mixer (with the paddle attachment), hand held electric mixer, or mix by hand with a wooden spoon. Blend until the mixture is thoroughly combined, but still has some texture.

Taste and adjust seasoning, if necessary. (If you like your dip more spicy, feel free to add in a pinch of cayenne pepper.)

You can serve it right away or cover tightly and chill for ⏱️ 1 hour (or overnight) to allow flavors to develop.Pimento cheese hardens as it chills; so if you do chill it, let it rest for ⏱️ 30 minutes at room temperature to soften.
