Place eggs in a large saucepan, adding enough cold water to cover by 2 inches; bring to a boil. Remove from heat, cover, and let stand ⏱️ 11 minutes.

Drain eggs and return to pan. Gently shake pan until eggs crack all over. Run under cold water, then peel eggs; discard shells.

Halve eggs lengthwise and transfer yolks to a bowl. Add mayonnaise, lemon juice, hot sauce, and salt; mash with a fork to combine. Add roasted pepper, Cheddar, and scallion and stir to combine. Spoon or pipe into egg whites and garnish with additional scallions.
