Preheat the oven to 350°F. Grease and flour a 9-by-13-inch baking pan with the margarine and flour. Drain the mandarin oranges, reserving 1/2 cup of the juice.

For the cake: In a stand mixer fitted with a paddle attachment, combine the cake mix, eggs, vanilla, margarine, and the ½ cup reserved juice from the mandarin oranges. Beat on medium-high speed until smooth, about ⏱️ 4 minutes. Add the drained oranges and beat again until the pieces are broken up and small, about ⏱️ 30 seconds. Pour the batter into the prepared pan and bake until golden brown and a toothpick inserted in the center comes out clean, 25 to ⏱️ 30 minutes. Let cool completely in the pan on a rack, about ⏱️ 1 hour. If desired, turn the cake out onto a large platter.

For the topping: Once the cake is cool, whisk the drained pineapple with the vanilla pudding mix in a medium bowl. Stir in the powdered sugar, then fold in the frozen whipped topping. Spread the frosting on the top and sides of the cooled cake and refrigerate for at least ⏱️ 2 hours and up to 3 days.
