Place the apple cider vinegar, coconut sugar, and 200ml water in a small saucepan over medium heat. Bring to a simmer and cook until the coconut sugar has dissolved, about ⏱️ 1 minute.

Place the cabbage, ginger, garlic and salt in a large bowl and pour over the hot vinegar mixture. Toss, using tongs or two forks until all the cabbage has been coated in the hot vinegar mixture. Cover and leave to cool at room temperature, about ⏱️ 45 minutes. It should reduce slightly in size as the vinegar mix permeates the cabbage.

Place in an airtight container and transfer to the refrigerator until it is completely cold. The colour will brighten as it chills.
