The longer the onions macerate in the lime juice the brighter pink and sweeter they become, so we recommend prepping these the day before you want to use them. You can multiply this recipe and make a bigger batch - they keep well in the fridge for up to 2 weeks and are delicious in salads, sandwiches and wraps.
