Bring vinegar, honey, sugar, and 3/4 cup water to a boil in a small saucepan. Reduce heat and simmer until honey and sugar are dissolved.

Place plums, orange, ginger, thyme, and vanilla bean in a bowl or jar. Cover with brine; cool to room temperature. Chill at least 1 day and up to 3 days.
