Pesto Avocado on Toast
This pesto avocado on toast is the ultimate avocado on toast. The pine nut pesto adds such a delicious flavour to the creamy mashed avocado. We love to top this with a sprinkle of chilli flakes and a crack of black pepper.

Place the garlic, olive oil, water, pine nuts, basil, lemon juice and a large pinch of salt into a blender or food processor. Blend until the mixture comes together but is still a little chunky.

Place the avocado flesh into a bowl and mash with a fork.

Once the mixture has broken down, mix through 1-2 tablespoons of the pesto (or as much as you like best). Spoon any leftover pesto into a sealable container and store in the fridge for up to a week.

Once ready to serve, toast the bread.

Spoon the avocado mixture on top of the bread and spread out using a spoon. Top with some black pepper and enjoy.
