Pesto & Crispy Spiced Tofu Sandwich
This is a great, speedy and simple lunch to make at home. The homemade pine nut pesto tastes delicious with the crispy spiced tofu. We love to make it with thick pieces of sourdough bread.

Place all of the pesto ingredients into a powerful blender or food processor and blend until a smooth pesto forms.

In a bowl, mix together the cumin, chilli powder, 2 tablespoons of olive oil and a large pinch of salt. Mix well.

Drain the tofu and pat dry with some kitchen roll. Once dry, cut the tofu into slices before placing into the bowl with the spiced oil. Mix well until all of the tofu is covered in the oil mixture.

Place a large pan over a medium-high heat and add a drizzle of olive oil. Once hot, add the tofu to the pan and cook for ⏱️ 5 minutes until the side facing down is crispy. Flip the tofu over and cook on the other side for ⏱️ 3-5 minutes until crispy. Once both sides are cooked, remove from the heat and leave to cool a little on some kitchen roll.

Toast the bread and spoon some pesto onto one slice. Top with the crispy tofu, some salad leaves, a sprinkle of chilli flakes and sandwich together with the last slice of toasted bread.
