Begin by heating a couple of tablespoons of oil in a large pot. Heat the oil until it is hot. While the oil is heating, liberally salt and pepper the roast. Brown the roast in the pot with the heated oil until the sides are brown. You are not going to fully cook the roast at this time. Add in all of the remaining ingredients.
