In a large shallow container or bowl, mix together the olive oil, honey, mustard, salt, oregano, thyme, and lemon juice.

Working with 1 piece of chicken at a time, place a breast between 2 pieces of plastic wrap and pound with the flat side of a meat mallet, a rolling pin, or a heavy skillet to a uniform thickness. Add the chicken to the marinade and turn to coat. Cover and refrigerate at least ⏱️ 2 hours and up to ⏱️ 8 hours. (Alternatively, mix the marinade in a large measuring cup and marinate the chicken in 2 large zip-top plastic bags.)

Remove the chicken from the refrigerator and let it sit at room temperature while preheating a grill or grill pan to medium high. Oil the grill grates.

Grill the chicken in batches until golden brown on one side, 4 to ⏱️ 5 minutes. Flip and cook until golden brown on the other side and an instant-read thermometer registers 165°F, 4 to ⏱️ 5 minutes more.
