Peppery Lamb Kabobs
To create a festive autumn presentation, we inserted these colorful, skewered lamb-and-pepper appetizers into a pumpkin; they look equally appealing arranged on a platter.

In medium-size bowl, combine chili puree and oil. Add lamb chunks, acorn squash, and pepper; toss until well coated. Cover mixture and refrigerate at least ⏱️ 3 hours or overnight.

To make kabobs, on each bamboo skewer, thread squash, lamb, pepper, lamb, and squash. Brush kabobs with remaining marinade.

Heat broiler. Arrange kabobs on aluminum foil-lined broiler pan. Broil kabobs, about 6 inches from heat source, 12 to ⏱️ 15 minutes or until lamb is cooked to desired degree of doneness, turning and basting halfway through cooking time with reserved marinade. Discard remaining marinade.

To serve, insert broiled kabobs into crown of pumpkin, if desired. Place pumpkin on serving plate; garnish top of pumpkin and plate with additional parsley leaves, if desired. Note: Chili puree with garlic, also known as chili paste, is available in specialty-food shops and in the Asian sections of some supermarkets.
