In a large bowl, combine the ground beef, Italian sausage, and Italian seasoning. Gently knead the mixture together and shape it into four ¾-inch-thick patties (about 4-inch rounds). Season both sides with the salt and pepper.

Spread the rolls evenly with the butter. Working in batches if necessary, toast the rolls butter-side down in a large cast-iron skillet over medium heat until golden and crisp, 1 to ⏱️ 2 minutes.

Wipe out the skillet and increase the heat to medium-high. Working in batches if necessary, add the patties, cover, and cook until cooked through and an instant-read thermometer registers 160°F, 4 to ⏱️ 5 minutes per side. During the last minute of cooking, top each burger with 2 slices of cheese and shingle 9 slices of pepperoni over the top; cover the pan for ⏱️ 1 minute to melt the cheese and warm the pepperoni.

Spread the buttered sides of each roll with marinara sauce and sprinkle the sauce with parmesan.

Lay the patties on the bottom buns, then top with the top buns. Serve immediately; hearty appetites are recommended!
