Preheat oven to 160°C fan / 350°F. Whisk together the coconut sugar, oil, water and vanilla extract in a large bowl until smooth.

Sift in the flour, rice flour, bicarbonate of soda and salt; fold gently to combine. Fold in the dark chocolate and pecans.

Line a baking tray with baking parchment. Scoop out tablespoons of dough, place on the lined baking tray and press down a little to flatten — make sure to leave plenty of space in between each one. Don’t worry about rolling the dough into completely smooth balls as the bumpy edges give texture.

Bake for 10–⏱️ 12 minutes until golden. Leave to cool slightly, then transfer to a wire rack to cool completely.
