Preheat oven to 425°F. Season chicken with salt and pepper. Whisk together flour, rosemary, paprika, and cayenne in a shallow bowl. Season with salt and pepper. Place eggs in a second shallow bowl. Season with salt and pepper. Combine pecans and panko in a third shallow bowl. Season with salt and pepper.

Working with one piece at a time, dredge chicken in flour mixture, turning to coat, then in egg (allowing excess to drip off), then in pecan mixture, pressing to help adhere; place on a rimmed baking sheet. Repeat with remaining chicken, flour, eggs, and pecan mixtures. Bake until the internal temperature on an instant-read thermometer reads 165°F, 30 to ⏱️ 35 minutes.
