Pearl Barley With Sage, Squash & Radicchio
We served this salad in the deli and it was such a hit with everyone that came in. The soft pearl barley is delicious with the roasted butternut squash, sage and radicchio.

Cook the pearl barley as per instructions on pack. Once cooked, drain and leave to once side.

Preheat oven to 190°C / 170°C fan / 375°F.

Place the butternut squash onto a baking tray with a drizzle of olive oil and pinch of salt. Cook for ⏱️ 30-35 minutes until soft.

In a small bowl, mix together the mustard, lemon juice, 2 tablespoons of olive oil and a pinch of salt. Once everything is cooked and drained, place all of the salad ingredients into a large bowl, pour over the dressing and mix well.
