Pearl Barley & Roasted Vegetable Salad
This salad is packed full of flavour and so simple to make. We love to make a big batch of our home-made harissa paste to mix through which adds a deliciously fresh flavour, but you can easily use shop brought harissa paste too. If you don't have any pearl barley, you can also use brown rice or quinoa.

Preheat the oven to 200C (390F), fan setting.

Cook the pearl barley according to instructions on the pack.

Place the butternut squash and red onion in a large baking tray and drizzle with olive oil and a large pinch of salt. Mix well and cook for ⏱️ 30-35 minutes, adding the red pepper halfway through. When the butternut squash is soft, remove from the oven and spoon into a large mixing bowl.

Squeeze the lemon juice into the bowl and add the cooked pearl barley, harissa paste, chopped parsley, another pinch of salt and a drizzle of olive oil. Mix really well to ensure everything is coated in the dressing ingredients, before spooning into bowls.
