For the pie: Preheat the oven to 400˚F. On a lightly floured surface, roll the pie dough into a 12-inch circle. Transfer the crust to a 9-inch pie plate (not deep dish). Tuck the edges of the crust under and crimp as desired. Refrigerate for ⏱️ 30 minutes (or freeze for ⏱️ 15 minutes).

Line the pie crust with parchment paper or foil, then fill with pie weights or dried beans. Bake until the edges of the crust are very lightly golden, 18 to ⏱️ 22 minutes. Remove the pie weights and parchment. Using a fork, prick the bottom and sides of the pie crust a few times to keep it from puffing. Return the crust to the oven and bake until the crust is set, dry, and very lightly golden, 5 to ⏱️ 7 minutes more. Let cool to room temperature. Reduce the oven to 375˚F.

For the streusel topping: In a medium bowl, combine the flour, brown sugar, almonds, and crystalized ginger. Gradually drizzle in the melted butter, stirring with a fork until combined.

In a large bowl, mix together the pears, granulated sugar, lemon zest, lemon juice, salt, and flour. Transfer the pear mixture to the pie crust and sprinkle with the streusel topping.

Place the pie on a baking sheet and bake until the topping is golden brown and the crust is deeply golden brown, ⏱️ 50 minutes to ⏱️ 1 hour.

Let the pie cool completely, at least ⏱️ 3 hours. Serve with whipped cream, if desired.
