Pear & Dark Chocolate Muffins
Our favourite weekend bake. These soft, gooey muffins are made with mashed banana, spelt flour, coconut sugar, pear and dark chocolate chunks.

Preheat the oven to 180C, fan setting. Line 10 muffin cases.

Peel the pears, then cut them into small cubes and leave to one side.

Mix the flour, coconut sugar, bicarb and baking powder together in a large bowl. In a separate bowl, mash the bananas until smooth, then add the almond milk and coconut oil and stir together.

Combine the wet and dry ingredients, then add the pear cubes and dark chocolate chips before giving everything another really good mix. Pour the mixture into the muffin cases.

Bake for ⏱️ 25 minutes, until the muffins are golden and a knife inserted in the centre comes out clean.

Once cooked, leave the muffins to cool in their tray for at least ⏱️ 10 minutes, which allows them to finish firming up, then transfer them to a wire rack to finish cooling or serve them warm out the tin.
