Preheat oven to 350°F with rack in the bottom position. On a lightly floured surface, roll dough to an 18- by 13-inch rectangle. Fit in a 15- by 10-inch jelly-roll pan. Trim overhang to 1 inch, fold under, and crimp. Chill.

Whisk together eggs, sugar, caramel sauce, vanilla, and salt in a bowl. Whisk in butter until combined. Stir in peanuts. Pour into crust. Bake until filling is set but still jiggles slightly in the center, 35 to ⏱️ 40 minutes. (Shield just the filling with foil after ⏱️ 25 minutes to prevent overbrowning, if necessary.) Transfer to a wire rack; cool completely. Sprinkle with sea salt and serve with ice cream.
