Peanut Butter Chocolate Ice Cream Lollies
Summer desserts don’t get much better than these ice cream lollies, featuring a rich chocolate ice cream with a peanut butter core, all encased in a salted chocolate peanut coating.

Lay 4 ice lolly sticks, spread evenly apart, on a sheet of baking parchment and spoon 1 tablespoon of peanut butter onto the top end of each stick. If your peanut butter is quite stiff, mould it around the stick. Place in the freezer until needed.

To make the ice cream, place 50g / 1.8 oz peanut butter, along with the water, into a high-speed blender. Blitz for ⏱️ 3 minutes until you have a creamy liquid.

Pour the peanut butter liquid into a saucepan and add the sugar and coconut oil; bring to a simmer. In a small bowl, combine the cornflour and cacao powder with 2 tablespoons of cold water and stir until it forms a paste. Turn the heat down to low and whisk the cacao paste into the simmering peanut butter mixture. Stir for ⏱️ 2 minutes until it is slightly thickened and coats the back of a spoon. Take the mixture off the heat and whisk in the chocolate with a pinch of flaky sea salt, until the chocolate is melted and well combined.

Decant the mixture into a bowl, so that it stops cooking. Place a sheet of parchment or clingfilm on top to prevent a skin from forming and leave to cool completely at room temperature.

Once cool, pour the ice cream mixture into 4 ice lolly moulds and insert the peanut butter core sticks from the freezer. Place the lollies in the freezer overnight until completely frozen.

Once the lollies are frozen, line a tray that will fit in your freezer with baking parchment and place it in the freezer, in preparation for the finished lollies.

To make the topping, mix the melted dark chocolate with the hot water, chopped peanuts, a pinch of salt and maple syrup, until everything is combined and the peanuts are well covered.

Take the frozen lollies out of the moulds; if you’re struggling to remove them, run the moulds under a hot water tap to release them.

Dip each lolly into the dark chocolate, shake off any excess and place them onto the parchment-lined tray in the freezer (as you go, so that they don’t melt). Repeat until every lolly is coated. Freeze for at least ⏱️ 30 minutes before enjoying.
