📝 Preparation Steps
1
Preheat the oven to 350°F. Butter a 9-by-13-inch baking pan. Line the pan with parchment paper, leaving a 1-inch overhang on the two long sides. Butter the parchment paper.
2
In a medium bowl, whisk together the flour and baking powder.
3
In a stand mixer fitted with the paddle attachment, beat the butter, granulated sugar, brown sugar, and honey on low speed until just combined, ⏱️ 30 seconds. Scrape the bottom and sides of the bowl and increase the speed to medium, beating until light and fluffy, 2 to ⏱️ 3 minutes. Decrease the speed to low and beat in the eggs, one at a time, and then the vanilla. Beat in the peanut butter until fully combined, about ⏱️ 1 minute. Gradually add the flour mixture to the butter mixture, mixing until the dough just comes together.

4
In a medium bowl, reserve 1 ¼ cups of the dough for the topping and spread the rest of the dough into the prepared pan. Spread the preserves evenly over the dough. Mix the peanuts into the reserved dough and use a spoon to drop small pieces of the mixture over the jam (some jam will show through).
5
Bake until the top is golden brown and the jam is bubbling, 40 to ⏱️ 45 minutes.
6
Allow to cool completely in the pan for ⏱️ 2 hours. Lift the bars out using the parchment as a sling and cut into 15 pieces.
